Cheesy Campfire Potatoes

- 4 large Russet potatoes (sliced)
- 1 cup shredded cheddar cheese
- 1/2 cup mozzarella cheese
- 1/4 cup olive oil
- 1 onion (diced)
- 4 cloves garlic (minced)
- 1 teaspoon paprika
- Salt and pepper to taste
- Optional: chopped parsley for garnish
- Preparation: Preheat the campfire or grill. Tear off four large pieces of aluminum foil, enough to wrap each potato serving.
- Seasoning: In a large bowl, mix the sliced potatoes, diced onions, minced garlic, paprika, salt, and pepper. Drizzle olive oil over the mixture and toss well.
- Cheese Time: Sprinkle half of the cheddar and mozzarella cheese into the bowl and mix.
- Wrap It Up: Divide the potato mixture among the four pieces of foil. Sprinkle the remaining cheese on top of each.
- Cook: Place the foil packets on the campfire grate or grill. Cook for about 20-25 minutes, or until the potatoes are tender.
